Timeline: 7:00-8:00 Plan for the day. MEP Food & Equipment. 8:00-9:00 Started Cinnamon Bun dough. First rise. Traced rounds for Tuille Cookies. Cleaned station. 9:00-10:00 Chef demo rolling out and forming buns. Made Tuille Cookies. Proofed Cinnamon Buns to speed up first rise. Made filling for Cinnamon Buns. 10:00-11:00 Continued making Tuille Cookies. Summary & Personal Observations:
Today was a fun day. I made another recipe involving yeast and rises (Cinnamon Buns), and had a great time doing that. (Although I have to say that I'm glad the raisins were optional in the recipe!) I would like to learn how to form the dough before putting it in the bowl for the first rise; mine always looks a little sloppy and not like a nice ball. Perhaps I need to shape it into a rough boule? I shall have to ask Chef.
It was cool to watch the ice cream being made, because I've never seen a real ice cream machine like that. It was also delicious to eat later.
I also finished the Tuille Cookies from yesterday. Spreading the batter on the Silpats with an offset spatula was fun. Molding them so quickly after coming out of the oven was a bit challenging, but by the third pair that I did, I was starting to get the hang of it. I would like to practice more sometime again at shaping them better, perhaps in a lab session.
